After washing the beans, I let them dry and then hand roast them in small batches using traditional Senegalese coffee roasting methods. While the coffee is being roasted, grains of Selim pepper (known as djar in Senegal) are added while the heat is still on, then the coffee and djar are ground together. The result is coffee Touba or cafe touba as it's famously known in West Africa. Hope you enjoy it!
